Green Chile Hummus

WOW! This is really a great flavor. Take Classic Hummus and add Hatch Green Chile to it and mix it up. Another option… Garlic with the Green Chile. Great dip and healthy too. Here is a recipe we use to make our own Hummus.


1 pound bag of garbanzo beans

1 teaspoon baking soda

1/2 cup tahini plus more if needed

Four cloves of garlic

1/4 cup ice water

1 1/2 teaspoons coarse salt or more if needed

Juice of two lemons more if needed

Hatch Green Chile. Add as much as desired.


Soak garbanzo beans overnight. Drain off water, place in a pot and cover with fresh water.  Bring to a boil and. boil for  five minutes cover and reduce to a simmer.  Cook for approximately two hours until almost tender.

Add 1 teaspoon baking soda and continue to simmer for 20 more minutes. Drain beans and place in cold water letting skins float to the top. Remove most of the skins.

Mince garlic place in food processor with lemon juice and salt. Blend for 30 seconds and let sit for five minutes to mellow the garlic. 

Add tahini and blend for 30 seconds.

Add garbanzo beans to the blender and blend until smooth.

Add a quarter cup of ice water. Continue to blend and adjust tahini lemon juice and salt to taste
