Fresh Ground Corn Bread with Serranos & Corn
We love to make Fresh Ground Corn Bread, but with a little twist. We add some real corn for a great chew and texture… and chop up a few Serranos, or Jalapeños or even some of our Hatch Green Chile.
1 1/3 cups all-purpose flour
1 cup yellow cornmeal
1/3 cup granulated sugar
1 teaspoon salt
3 1/2 teaspoons baking powder
1/3 cup neutral oil or melted butter
1 large egg
1 cup milk
Options: 1/2 c Whole Kernel Corn (add to batter). 2 chopped Serranos or Jalapeños or Green Chile (add to batter).
Toppings Suggestions: Small chopped onions, Diced Tomatoes, Sliced Avocados.
Meal Ideas: Goes GREAT with 15 Bean, Pinto Bean… really any beans and many Soups. Chile
FYI: Beans with any Grain (like Corn or Rice), makes a complete protein.
